When local produce are in season, simple recipes are best, like this quick heirloom tomato salad. Delicious, fresh and a great side dish!
Ingredients
4heirloom/organic tomatoesideally in different colours, washed, sliced
1/3cuporganic cherry tomatoes in different shape and colourswashed, cut in half
2Tbspfresh basil leaves
1Tbspfresh thyme
1Tbspfresh oregano
4Tbspcreamy goat cheeseor cashew cheese for vegan option
2Tbsphemp seeds(optional)
1/2tspsea salt
1/8tspblack peppera pinch, to taste
3Tbspextra-virgin olive oil
2Tbspbalsamic vinegar
2tspmaple syrup
Instructions
Mix the olive oil, balsamic vinegar, and maple syrup together in a small bowl. Put aside.
Simply put all the tomato slices and cherry tomatoes on a platter, sprinkle a pinch of sea salt, pepper, a few pinches of hemp seeds (if using). Add fresh herbs (if using)
Drizzle with the dressing.
Add 4 Tbsp of creamy goat cheese.
Serve immediately.
