5 Ingredient Black Bean Burger with Aïoli and Sweet Potato Fries | Vegan | Gluten-Free

Add a green salad on the side and you've got a complete, easy, and healthy meal ready in about 30 minutes that the whole family will enjoy! 

Ingredients

Sweet Potato Fries

  • 2 lbs organic sweet potatoes washed, yucky parts removed/trimmed, cut in wedges or fries
  • 1/2 tsp paprika powder
  • 1/4 tsp turmeric powder
  • 1 tsp herbes de Provence mix (or dry oregano, thyme and rosemary)
  • 1/8 tsp black pepper to taste
  • 2 Tbsp extra-virgin olive oil
  • 1/4 tsp grey sea salt to sprinkle on after the fries are cooked

Cilantro Aïoli

  • 1 clove garlic minced very finely
  • 3 Tbsp fresh cilantro chopped
  • 1/3 cup organic mayonnaise of your choice
  • fresh lemon juice a squeeze
  • black pepper to taste

Black Bean Burgers

  • 398 ml organic black beans (1 regular size can) rinsed and drained
  • 1/4 cup chickpea flour
  • 1/4 cup tapioca starch
  • 1 red onion minced
  • 3 Tbsp fresh cilantro minced
  • 1/2 tsp paprika powder
  • 1/2 tsp sea salt
  • black pepper a few pinches
  • extra-virgin olive oil for cooking

Instructions

Sweet Potato Fries

  1. Warm oven to 375F. Put the fries in a large mixing bowl, drizzle with olive oil and mix. Then sprinkle all the spices over them (except the salt) and mix well. Place the sweet potato fries on a baking sheet lined with parchment paper. Spread them so that they are not touching.

  2. Bake in oven at 375F for about 30 minutes, or until nicely golden and roasted. (The bigger the wedges, the longer it takes to bake.)

Cilantro Aïoli

  1. Simply mix all ingredients in a small bowl, and set aside.

Black Bean Burgers

  1. Put the black beans in a large bowl and mash using a potato masher (or a fork), or alternatively, if you have a food processor or blender, use that, it'll be even faster. Add the onion, coriander, paprika, sea salt and pepper. Mix well.
  2. Then add the 2 flours and mix really well. It should give you a creamy dry texture. Then using your clean hands, divide the mixture in half and then in half again, make 4 balls and flatten them in your hands, like hamburger patties.

  3. Warm a large pan over medium heat (or slightly lower to avoid the smoking/burning point). Drizzle with a good amount of olive oil and immediately put the burgers in to cook. Only about 3 minutes per side, or until nicely golden and crisp. Keep them in a warm oven if cooking more.

  4. Serve on a toasted wholegrain bun with aïoli, lettuce, red onion slices, and tomato slices, with sweet potato wedges on the side. A side green salad would be a great addition! Yum!

Recipe Notes

Be careful when flipping the burgers over! They can easily slip and fall, splashing hot oil!
